Ingredients

  • 1 Mission® 8 inch Flour Tortilla
  • 90ml Egg, whisked
  • 60g Carnitas-Style Pulled Pork
  • 30g Avocado, diced
  • 30g Tomato, diced
  • 30g Spiced Creamed Corn
  • 30g Butter, melted 

Instructions


1. Heat Mission® Flour Tortilla and place on work surface. Heat liquid butter in non-stick sauté pan; add pork to heat.
 
2. Add eggs and cook to scramble. Add tomatoes, avocado and corn. Remove from heat.
 
3. Place egg mixture in centre of tortilla. Fold “jacket style” bringing bottom half of tortilla towards filling and folding both sides towards centre.
 
4. Wrap with paper and serve open ended. Serve warm.
